Saag Aloo Shepherd’s Pie
Last night I made something close to the saag aloo shepherd’s pie from Anna Jones’s new book One, which is out this week. I didn’t have spinach, so I used a combination of peas and sliced Brussels sprouts, although as I added the peas I realised that I had perhaps overdone the legumes. But it was excellent!
Update: it was very excellent on toast the next day, too. Curry on toast! Where’s my James Beard award?
